Seychelles cuisine comes into being as part of the various fusions of French, Indian, Chinese and African. Creole cooking in the Seychelles offers some surprising flavors that will satisfy the most difficult palates, fish above all, always fresh and inexpensive. Rice and vegetables accompany these creole dishes. Sweets too make extensive use of local tropical fruit, ever present in everybody's gardens and in the woods, bananas, passion fruit, coconuts, mangoes, and star fruits are basic ingredients of delicious sweets, juice and ice cream.
